PANCAKES
Prep Time: 10 mins | Cook Time: 10 mins | Total Time: 20 mins
Ingredients:
- 2 cups flour 
- 1/2 tbsp baking powder 
- 6 tbsp sugar 
- 1/2 tsp salt 
- 6 large eggs, separated 
- 6 tbsp melted butter 
- 1/2 tsp vanilla extract 
Directions:
- Add all dry ingredients into a large bowl (flour, baking powder, sugar, and salt) 
- In a separate bowl, whisk the yolks, milk, melted butter, and vanilla until combined. 
- Combine the wet with the dry ingredients until you form a batter. 
- Whip the egg whites in a bowl until they reach medium peaks. 
- Gently mix half the whipped egg whites into the batter, then fold in the remaining half. (Note - your batter should be a little lumpy and you should have large parts of egg whites not fully incorporated) 
- Heat your griddle and grease with butter or with non-stick spray. 
- Drop about 4 tbsp or 1/4 cup of batter onto the griddle and let cook. 
- Top with any desired toppings: chocolate chips, blueberries, bananas ect. 
- When the bottom looks golden brown, flip, cook on the other side till golden brown, then remove from griddle. 
- Top pancakes with butter, maple syrup, or any other desired toppings. 
- Enjoy! 
Notes:
*This recipe makes about 8 to 10 pancakes. You can double or half the ingredients to your preference.
