ONE-SKILLET CHICKEN FAJITAS
Prep Time: 5 mins | Cook Time: 40 mins | Total Time: 45 mins
Ingredients:
- 3 tbsp olive oil, divided 
- 3 garlic cloves, minced 
- 2 poblano chiles, halved, seeded, and cut into thin strips *optional 
- 1 red bell pepper, halved, seeded, and cut into thin strips 
- 1 yellow bell pepper, halved, seeded, and cut into thin strips 
- 1 large white onion, halved lengthwise and thinly sliced 
- 3 tsp kosher salt, divided 
- 1 1/2 tsp black pepper, divided 
- 2 lbs. boneless, skinless chicken breast 
- lime 
- salsa 
- guacamole 
Directions:
- In a large cast-iron skillet heat 2 tbsp olive oil over high. 
- Add garlic, chiles, bell peppers, and onion. 
- Season with 1 1/2 tsp salt and 1 tsp black pepper 
- Cook, stirring often, until vegetables are soft and lightly charred, about 12 to 15 minutes. 
- Transfer vegetables onto a plate, set aside. 
- Do not wipe skillet clean. 
- Season chicken evenly with remaining 1 1/2 tsp salt and 1/2 tsp pepper. 
- Heat remaining 1 tbsp olive oil in skillet over high. 
- Add chicken, and cook until browned, about 12 minutes per side. 
- Transfer chicken and let rest for 5 minutes, then cut into thin strips. 
- Do not wipe skillet clean. 
- Return vegetables into skillet and cook over medium heat, stirring often, for 2 minutes. 
- Remove from heat, add chicken, and toss together, 
- Serve with salsa, guacamole, lime, and warm tortillas. 
Notes:
*I like to use ready made chicken because it cuts the process time in half!
