TURKEY BOLOGNESE
Prep Time: 10 mins | Cook Time: 2 hours | Total Time: 2 hours and 10 mins
Ingredients:
- 1 - 2 tbsp olive oil 
- 1 lb ground turkey 
- 1 cup onion, diced 
- 3/4 cup carrots, diced 
- 3/4 cup celery, diced 
- 1 tbsp garlic, minced 
- 1/2 tsp salt 
- 1/4 tsp black pepper 
- 1 bay leaf 
- 1/2 tsp thyme 
- 1/4 tsp oregano 
- 1/4 tsp cinnamon 
- 1 - 2 tbsp tomato paste 
- 1 can (14 1/2 oz) crushed tomatoes and the juice 
- 8 oz tomato sauce 
- 8 oz diced tomatoes 
- 1/2 can chicken broth 
- 1 tsp sugar 
- 1/2 cup white wine 
- 1 tbsp butter (I used dairy-free butter) 
- 1/3 cup milk (I used dairy-free milk) 
- 1 tbsp parsley 
- 1 box of spaghetti 
Directions:
- In a large pot, heat olive oil over high heat and add onions, carrots, and celery and cook until soft (about 5 minutes). 
- Add garlic, salt, pepper, bay leaf, thyme, oregano, and cinnamon and stir. 
- Add the ground turkey and cook until no longer pink. 
- Add tomato paste and let cook for 1-2 minutes. 
- Add wine, stir and let cook for about 2 minutes. 
- After half the liquid is evaporated, add crushed and diced tomatoes, tomato sauce, broth, and sugar. 
- Reduce heat to medium low and cook until sauce thickens. Stirring occasionally. 
- Cook for about 1 1/2 hours. 
- Add milk, butter, and parsley then stir for about 2 minutes over high heat. 
- Discard bay leaf. 
- Cook spaghetti, serve with sauce and cheese, if desired. 
- Enjoy!
