BBQ CAULIFLOWER RICE QUINOA BOWL

Ingredients:
- 1/4 cup red bell pepper 
- 1/4 cup zucchini 
- 1/4 cup tomatoes 
- 1/4 cup carrots 
- 1/4 cup onion 
- 1/4 cup broccoli 
- 1/4 cup mushrooms 
- 1/4 cup quinoa 
- 1/2 cup water 
- 1/4 cup cauliflower rice 
- 1 -2 handfuls of spinach 
- 1 tbsp olive oil or olive oil spray 
- 1/4 tsp salt 
- 1/4 tsp pepper 
- 1/4 tsp garlic powder 
- 1/4 tsp everything but the bagel seasoning 
- 1 - 2 tbsp BBQ sauce 
Directions:
- In a small pot, add dry quinoa and water and bring to boil. 
- Once boiling, lower heat to simmer and cover pot with a lid. 
- Let quinoa cook for about 15 minutes or until fluffy. 
- On a large cutting board, slice and dice red pepper, zucchini, tomatoes, carrots, broccoli, mushrooms, and onion. 
- Over medium to high heat, spray a large skillet with olive oil or add olive oil. 
- Add veggies to skillet. 
- Let veggies cook for about 2 minutes. 
- Add cauliflower rice. 
- Add BBQ sauce, salt, pepper, garlic powder, and everything but the bagel seasoning and mix. 
- Continue to let the veggies cook until they are tender - about 5 minutes. 
- In a bowl, add spinach. 
- Once veggies are cooked, add quinoa and combine. 
- Add veggies to your bowl with spinach and enjoy!
