GRILLED CHICKEN VEGETABLE QUINOA BOWL

*makes 2 bowls
Ingredients:
- 2 boneless, skinless chicken breasts 
- 1/2 cup quinoa 
- 1 cup water 
- 1/2 cup zucchini 
- 1/2 cup carrots 
- 1/2 cup tomatoes 
- 1/2 cup broccoli 
- 2 handfuls of spinach 
- 1/2 tsp salt 
- 1/2 tsp pepper 
- 1/2 tsp garlic powder 
- 1/2 tsp everything but the bagel seasoning 
- 2 tbsp olive oil or olive oil spray 
- lime 
- cilantro 
Directions:
- In a small pot, add dry quinoa and water and bring to boil. 
- Once boiling, lower heat to simmer and cover with a lid. 
- Let quinoa cook for about 15 minutes or until fluffy. 
- Wash chicken breasts and place on a clean board. 
- Sprinkle chicken breasts with salt, pepper, and garlic powder. 
- In a large skillet, add 1 tbsp olive oil or spray with olive oil spray. 
- Over medium heat, add chicken to skillet. 
- Let cook for a few minutes or until brown, flip and repeat. 
- On a cutting board, slice and chop vegetables. 
- In a separate skillet, spray or add 1 tbsp olive oil. 
- Over medium to high heat, add vegetables. 
- Let cook for about 2 minutes. 
- Add salt, pepper, garlic powder, and everything but the bagel seasoning and mix. 
- Continue to let the veggies cook until they are tender. 
- Add spinach to the base of your bowls. 
- Add chicken, quinoa, and veggies. 
- Top with fresh lime and cilantro *optional. 
- Enjoy!
