GRILLED BBQ CHICKEN BOWL

*makes 4 bowls
Ingredients:
- 1-2 tbsp olive oil or olive oil spray 
- 1 large red onion 
- 2 red bell peppers 
- 1 avocado 
- 1 can black beans, drained and rinsed 
- 2 pieces of corn on the cob 
- 4 boneless, skinless chicken breasts 
- ½ tsp salt 
- ½ tsp garlic powder 
- ½ tsp onion powder 
- ½ tsp paprika 
- ½ tsp pepper 
- 2 tbsp barbecue sauce 
- 1 package (5-ounce) baby spinach 
- Sliced lime 
- Chopped fresh cilantro (for garnish) *optional 
Directions:
Chicken:
- Wash and dry your chicken breasts. 
- Place chicken on a cutting board. 
- In a small bowl, add and mix together all your spices: salt, pepper, paprika, garlic powder, and onion powder. 
- Pour barbecue sauce over chicken and rub all over the front side of the chicken. 
- Sprinkle your spices over the chicken and rub all over. 
- Repeat the barbecue sauce and spice rub on the other side of the chicken. 
- Over medium to high heat, spray a large skillet with olive oil or add olive oil. 
- Add your chicken to the pan. 
- Let cook for about 5-7 minutes then flip. 
- Cook on the other side for another 5-7 minutes. 
- Remove chicken from stove once fully cooked (depending on how thick the chicken breast is, the time on each side may take longer). 
Corn:
- Add water to a large pot and place over high heat. 
- Once water is boiling, add corn to pot. 
- Let cook for about 6-10 minutes. 
- Let cool for 1-2 minutes then slice the corn off the cob. 
Vegetables and bowl assemblage:
- On a cutting board, slice the red bell peppers into thin slices. 
- Chop onion. 
- Slice avocado and dice into small squares. 
- Rinse and drain black beans. 
- In a bowl, add your base: spinach. 
- In sections add your toppings: corn, onion, pepper, beans, and avocado. 
- Slice your chicken and add to the center of the bowl. 
- Slice lime and chop cilantro and add to the top of your bowl. 
- Drizzle with barbeque sauce and enjoy!
