QUINOA VEGGIE BOWL
Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Ingredients:
- 1 tbsp olive oil or olive oil spray 
- 1 zucchini 
- 1 red bell pepper 
- 1 yellow bell pepper 
- 1/2 cup sliced tomatoes 
- 1/2 cup diced carrots 
- 1/4 cup diced onion 
- 1/2 cup chopped broccoli 
- 1/4 cup cauliflower rice 
- 1 - 2 handfuls of spinach 
- 1/2 tsp salt 
- 1/2 tsp pepper 
- 1/2 tsp garlic powder 
- a sprinkle of Trader Joe’s everything but the bagel seasoning 
- 1/2 cup quinoa 
- 1 cup water 
- balsamic vinegar 
Directions:
- In a small pot, add 1 cup of water, a dash a salt, and dry quinoa. 
- Cook quinoa over high heat until its boiling. 
- Once boiling, lower heat, cover pot, and let simmer for about 15 minutes. 
- Slice all your vegetables. 
- Over medium to high heat, spray a large skillet with olive oil spray or add olive oil. 
- Add your sliced veggies (zucchini, tomatoes, peppers, onion, broccoli, and carrots) and let sauté. 
- After 1-2 minutes, add cauliflower rice and stir. 
- Once vegetables look soft, add spinach and let cook. 
- Add seasoning and pour a splash balsamic vinegar (optional). 
- Continue stirring until veggies are soft and brown. 
- Once quinoa is fluffy and there is no water remaining, add quinoa to veggies. 
- Mix, serve, and enjoy! 
Notes:
*you can use any vegetables! this recipe is one of my favorites because I just throw in whatever veggies I have available at the time. Feel free to substitute any of the vegetables listed above.
*you can also add any desired protein: chicken, turkey, or tofu.
*makes about 2 servings.
