CINNAMON ROLL MUG CAKE
*vegan, dairy-free

Ingredients:
Dough:
- 4 tbsp flour 
- 2 tbsp unsweetened almond milk 
- ½ tsp brown sugar 
- ½ tsp baking powder 
- Pinch of salt 
- Pinch of cinnamon 
Filling:
- 1 tsp maple syrup or butter 
- 2 tsp brown sugar 
- Pinch of cinnamon 
- Pinch of salt 
Icing:
- 1 tbsp powdered sugar 
- Splash of almond milk 
Directions:
- In a bowl, add flour, cinnamon, baking powder, salt, and sugar and mix. 
- Add in milk and mix together until you begin to form a dough. 
- With your hands, knead dough for about 1-2 minutes. 
- If the dough is too dry, add a splash of almond milk and if the dough is too wet, add a pinch of flour. 
- Let dough sit for a minute. 
- Lightly flour a flat surface and begin to flatten dough until you form a rectangle. 
- Lighty spread either the maple syrup or the butter over the surface of the dough. 
- Sprinkle brown sugar, cinnamon, and salt over the surface. 
- Using a spoon, evenly spread the cinnamon mixture over the dough. 
- Starting at the end of the rectangle, begin rolling the dough to form a log shape. 
- Cut log into 4 even pieces. 
- Take pieces and place into a mug (or a microwavable dish). 
- Place the mug in the microwave and cook for 30 seconds. 
- Open the microwave and let cool for a second. 
- Close the microwave door and let cook for another 30 seconds. 
- Let cool. 
- In a small bowl make icing: combine powdered sugar and almond milk. 
- Once cooled, drizzle icing and enjoy!
