GRILLED CHICKEN TACO BOWL

*makes 2 bowls
Ingredients:
- 2 boneless, skinless chicken breasts 
- 1/2 cup tomatoes 
- 1/2 cup rinsed and drained black beans 
- 1/2 cup cooked corn 
- 1/2 cup zucchini 
- 1/2 cup onion 
- 2 handfuls of spinach 
- 1 avocado 
- 1 tsp salt 
- 1 tsp pepper 
- 1 tsp garlic powder 
- 1/2 tsp everything but the bagel seasoning 
- 2 tbsp olive oil or olive oil spray 
- lime 
- cilantro 
Directions:
- Clean chicken breasts and place on a board. 
- Season chicken breasts with 1/2 tsp salt, pepper, and garlic powder. 
- Over medium heat, spray a skillet with olive oil or add olive oil. 
- Add chicken and let cook until brown, flip, and repeat. 
- On a cutting board, chop zucchini, tomatoes, and onion. 
- In a separate large skillet, spray with olive oil or add olive oil. 
- Add chopped vegetables, corn, and beans and let cook for about 2 minutes. 
- Season vegetables with the remaining salt, pepper, garlic powder, and everything but the bagel seasoning. 
- Let the vegetables cook until they are tender. 
- In a bowl, add spinach to the base. 
- Top spinach with vegetables. 
- Add chicken. 
- Top with diced avocado, lime, and cilantro. 
- Enjoy!
